I was about to say, yours is a post ford by the sounds of things

Pre Ford badge - wings badge only came on the 98 models
Unbadged steering wheel - badged wheel only came on the 98 models
Koito lights - bosch lights only came on the 98 models
Old style heater panel - pic?
Instrument panel dimmer wheel & headlight adjustment wheel - came on both pre and post fords
Flowery seats (but dark blue, so pattern not really noticeable) - post ford seats
Vinyl seat backs - option I think?
No map pocket in passenger seat - none of my post fords had one either!
No puddle lights - post fords didnt have them
Light in door lock - post ford only
Rubber gear stick gaitor (looks awful, recesses continually collect dust & crap) - pre and post ford - leather was an option!
Deep door pockets with no lids - post ford
Boot release by driver's seat; no push release button in back panel - post ford
Proper lever for seat adjustment (i.e. not just a cable) - post ford
Black strips on doors - post ford
No coolant pipes - you mean aircon pipes? thats just it not having aircon

High level brake light - post ford
Wing mirrors black plastic, backs not colour matched to body (or is it shape that determines pre/post?) - anyway, they have an amazing range of vision so I presume pre-Ford. - as Matt says, groove in the back is post ford, smooth is pre-ford

sounds like you have a post ford car entirely, other than maybe the heater control panel

EDIT: The heater panel was the same in all Fs apart from the really early pre fords, it would seem! Most had the style all of mine have had:
